A simple, compliant casserole featuring shredded chicken in a savory Whole30 BBQ sauce, topped with a layer of mashed sweet potato instead of traditional starches.

Ingredients

  • 2 cups cooked, shredded chicken breast
  • 1 cup compliant Whole30 BBQ sauce
  • 1/2 cup full-fat unsweetened coconut milk
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 3 large sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, combine the shredded chicken, BBQ sauce, coconut milk, apple cider vinegar, onion powder, garlic powder, and smoked paprika. Mix until the chicken is fully coated.
  3. Spread the chicken mixture evenly into the prepared baking dish.
  4. Place the cubed sweet potatoes in a saucepan and cover them with water. Bring to a boil and cook until very tender, about 15 to 20 minutes.
  5. Drain the sweet potatoes completely. Mash them with a fork or potato masher, adding the olive oil, salt, and pepper until smooth.
  6. Spoon the mashed sweet potato mixture evenly over the top of the chicken layer. Spread gently to cover the entire surface.
  7. Bake for 25 to 30 minutes, or until the topping is lightly browned and the filling is hot throughout.
  8. Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh cilantro.

Notes

  • For the BBQ sauce, check labels carefully for added sugar, corn syrup, or sulfites to ensure it is Whole30 compliant.
  • You can cook the chicken in a slow cooker or Instant Pot ahead of time for easier meal prep.
  • If you prefer a slightly thinner topping, add a splash of extra coconut milk to the mashed sweet potatoes.
