1 1/4 cups (250g) granulated sugar
3/4 cup (150g) packed light brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
3/4 cup (90g) all-purpose flour
1/2 cup (45g) unsweetened cocoa powder
1/2 teaspoon salt
4 ounces (113g) bittersweet chocolate, chopped
Instructions
Melt the butter in a light-colored saucepan over medium heat. Continue cooking, stirring often, until the butter foams, then subsides, and brown bits form at the bottom, releasing a nutty aroma. This takes about 5 to 8 minutes. Immediately pour the brown butter into a heatproof bowl to stop cooking.
Whisk the granulated sugar and brown sugar into the warm brown butter until fully combined. The mixture will look slightly grainy.
Whisk in the eggs one at a time until just combined. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, cocoa powder, and salt.
Gently fold the dry ingredients into the wet ingredients until just a few streaks of flour remain. Do not overmix.
Fold in the chopped bittersweet chocolate.
Pour the batter into an 8×8 inch baking pan lined with parchment paper, leaving an overhang for easy removal.
Bake at 350°F (175°C) for 25 to 30 minutes. A toothpick inserted near the center should come out with moist, sticky crumbs attached, not wet batter.
Cool completely in the pan on a wire rack before cutting into squares. Cooling fully helps set the chewy texture.
