6 medium apples (Granny Smith or Honeycrisp recommended)
1/4 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1 tablespoon lemon juice
1 cup all-purpose flour
1 cup rolled oats
3/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
Instructions
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease an 8×8 inch baking dish.
Peel, core, and slice the apples into 1/4 inch thick pieces. Place the apple slices in a large bowl.
In a small bowl, mix the 1/4 cup flour, 1/4 cup granulated sugar, 1 teaspoon cinnamon, and lemon juice. Toss this mixture with the apple slices until they are evenly coated.
Spread the coated apples in a single layer in the prepared baking dish.
Prepare the topping: In a separate medium bowl, combine the 1 cup flour, rolled oats, brown sugar, 1/2 teaspoon cinnamon, and salt.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Do not overmix; some pea-sized pieces of butter are fine.
Sprinkle the topping evenly over the apple mixture in the baking dish.
Bake for 35 to 45 minutes, or until the topping is golden brown and the apples are tender when pierced with a fork.
Let the crisp cool for at least 15 minutes before serving.
Notes
For a nuttier topping, add 1/2 cup chopped pecans or walnuts to the topping mixture.
Use firm, slightly tart apples for the best texture and flavor balance.
