A simple recipe for baked oatmeal that you can prepare ahead of time for easy weekday breakfasts or serving a crowd.

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar, packed
  • 1 1/2 cups milk (dairy or non-dairy)
  • 1 large egg, lightly beaten
  • 1/4 cup unsweetened applesauce or melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease an 8×8 inch baking dish.
  2. In a large bowl, mix the rolled oats, baking powder, cinnamon, salt, and brown sugar.
  3. In a separate bowl, whisk together the milk, egg, applesauce or melted butter, and vanilla extract.
  4. Pour the wet ingredients over the dry ingredients and stir until just combined. Do not overmix.
  5. Transfer the mixture to the prepared baking dish.
  6. Bake for 30 to 35 minutes, or until the top is lightly golden and the center is set.
  7. Let it cool for 5 minutes before cutting into squares.

Notes

  • For a fruit variation, gently fold in 1 cup of fresh or frozen blueberries or diced apples before baking.
  • To make this gluten free, use certified gluten free rolled oats.
  • Store leftovers covered in the refrigerator for up to 4 days. Reheat individual servings in the microwave.
