1 1/2 cups crushed Oreo cookies (about 30 cookies)
6 tablespoons unsalted butter, melted
16 ounces cream cheese, softened
1 cup powdered sugar
1/2 cup unsweetened cocoa powder
8 ounces semi-sweet chocolate, melted and slightly cooled
1 teaspoon vanilla extract
1 1/2 cups heavy whipping cream
1/2 cup chocolate chips, for topping
2 tablespoons heavy whipping cream, for ganache
Instructions
Mix the crushed Oreos and melted butter in a bowl. Press the mixture firmly into the bottom of a 9-inch springform pan. Chill the crust for 15 minutes.
In a large bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and cocoa powder, mixing until fully combined.
Pour in the melted, cooled semi-sweet chocolate and vanilla extract. Beat until the mixture is uniform and creamy.
In a separate bowl, whip the 1 1/2 cups of heavy whipping cream until stiff peaks form.
Gently fold the whipped cream into the chocolate cream cheese mixture in two additions until just combined. Do not overmix.
Spoon the filling over the chilled Oreo crust and smooth the top with a spatula.
Refrigerate the cheesecake for at least 6 hours, or preferably overnight, until firm.
To make the topping, heat the 2 tablespoons of heavy cream until simmering. Pour it over the 1/2 cup of chocolate chips in a small bowl. Let it sit for 5 minutes, then stir until smooth to create a simple ganache.
Pour the ganache over the set cheesecake and spread evenly. Chill for another 30 minutes before slicing and serving.
