  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 1 (8 ounce) package cream cheese, softened
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold
  • 1/4 cup powdered sugar (for topping)
  • 1 cup fresh strawberries, sliced

Instructions

  1. Prepare the crust: Combine graham cracker crumbs and 1/4 cup granulated sugar in a medium bowl. Pour in melted butter and mix until the crumbs are evenly moistened. Press the mixture firmly and evenly into the bottom of an 8×8 inch baking pan lined with parchment paper, leaving an overhang for easy removal. Place the crust in the freezer while you prepare the filling.
  2. Make the filling: In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the sweetened condensed milk until fully combined. Mix in the lemon juice, lemon zest, and vanilla extract until the mixture thickens slightly.
  3. Whip the cream: In a separate, clean bowl, beat the cold heavy whipping cream and powdered sugar until stiff peaks form.
  4. Fold the whipped cream into the cream cheese mixture gently until just combined. Do not overmix.
  5. Spread the filling evenly over the chilled crust. Cover the pan with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until completely set.
  6. Before serving, top the chilled bars with the sliced fresh strawberries. Lift the bars out of the pan using the parchment paper overhang, slice into squares, and serve immediately.

Notes

  • For the cleanest slices, run a sharp knife under hot water and wipe it dry between each cut.
  • If you prefer a stronger lemon flavor, add one more teaspoon of lemon zest to the filling.
  • Chill the bars for a minimum of six hours; setting time is crucial for no-bake recipes.
