1 1/2 cups granulated sugar
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon unsweetened cocoa powder
1 cup vegetable oil
1 cup buttermilk
2 large eggs
1 teaspoon white vinegar
1 teaspoon vanilla extract
2 tablespoons red food coloring
1 cup boiling water
1/2 cup (4 ounces) cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
1 tablespoon milk
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan well.
In a large bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder.
In a separate bowl, mix the vegetable oil, buttermilk, eggs, vinegar, vanilla extract, and red food coloring until combined.
Pour the wet ingredients into the dry ingredients and mix on low speed until just combined. Do not overmix.
Carefully stir in the boiling water until the batter is smooth and thin.
Pour the batter into the prepared Bundt pan.
Bake for 45 to 55 minutes, or until a wooden pick inserted into the center comes out clean.
Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
To make the drizzle, beat the softened cream cheese and butter together until smooth. Gradually beat in the powdered sugar and 1 teaspoon of vanilla. Add milk one teaspoon at a time until you reach a thick, pourable consistency.
Drizzle the cream cheese glaze over the cooled cake.
Notes
For the best red color, use a high-quality gel-based red food coloring.
Ensure your buttermilk is at room temperature before mixing for a more tender crumb.
If the glaze is too thick, add a few more drops of milk. If it is too thin, add a little more powdered sugar.
